A super easy veggie rice recipe for any season that can be prepared really quickly. We recommend refining this dish with our turmeric and ginger dressing but it can also be enjoyed with any of our dressings.
Works with every dressing:
Peel and finely cut 2 carrots and then finely chop up 1 green bel pepper, 150g of mushrooms and finely dice 1/2 red onion.
Sauté the onion in some oil until softened and slightly brown. Then add 1 cup of rice and 750ml boiling water, then the carrots, the bell pepper, the mushrooms, 2 heaped tbsp tomato paste, 2 stock cubes, 1/2 tsp garlic and cook for 15 minutes (from boiling).
That's it! Refine with our fragrant Dressini turmeric and ginger tahini dressing. Enjoy!
