This is about as easy as making dinner gets! The sweetness of the sweet potato in combination with our dressings and crunchy toasted pumpkin seeds is absolutely divine yet nutritious
Works with every dressing:
Ingredients (1 portion):
Wash 1 or 2 sweet potatoes (depending on your appetite and the size of the sweet potato).
Then cut them in half (depending on your appetite).
Either baste with olive oil or drizzle it on top and season with salt and pepper (we recommend a generous amount of salt but it's up to you).
Bake in the preheated oven on a baking tray at 200C (390F) for around 50 min or until tender.
In the meantime drizzle some oil to a pan, heat up and add a handful of pumpkin seeds. Season with salt and let toast until they are crunchy. Make sure you keep stirring so they won't burn.
Take out the baked sweet potatoes, drizzle our tahini dressing on top and add some finely chopped onion and the toasted crunchy pumpkin seeds for extra portein and nutrition. Garnish with freshly chopped parsley. Enjoy!
